I have a 4.5qt classic mixer, and in the manual it says to only mix at speed 2 when working with bread doughs. However, if I mix at speed 2 for any bread dough, it feels like even after 15 minutes not enough gluten is developed. The dough never stops clinging to the sides like I observe happening when I go use speed 4-7(I go higher if it's a ~250g dough) or following a video recipe. He loves baking and I love eating his home made bagels and heavy crusty italian bread. We spent our wedding money, on the professional grade kitchen aid food mixer. My husband was so excited. No more kneeding thick heavy bagel dough by hand. We can make our pizza dough, pasta dough, italian bread dough.... or so we thought. Today was the first day we used it... I'm not a huge baker and I don't want to let this sit unused. What else can I use it for, other than potatoes and meat shredding? I finally took the plunge and got a mixer, and holy moly does it make baking easier but I'd love to know what other food prep is easier/tastes better with the mixer? I've been told multiple times that it makes the best mashed potatoes so that's covered lol.
